Here are my favorites, though most of them you have already played,

1. The Elder Scrolls III: Morrowind
2. Star Wars: Knights of the Old Republic
3. Fable 2
4. Fallout 3
5. Mass Effect

probably been said by now... fable (not my favorite but its one of the better games that did not get the attention it should from both players and the developers... but still lots of fun

Gothic 2: Night of the Raven (actually first Gothic game was awesome also, Gothic 2 too, but the expansion made it even better)
Baldur's Gate 2: Shadow of Amn
Planescape: Torment
Deus Ex
System Shock 2
Morrowind

NWN, Fable, Fallout and KotOR series were also quite enjoyable

By far has got to be the most immersive game i've ever played.
